I forgot to mention that soaking your cut potatoes in water for 10 or 15 minutes prior to preparing them (then pat dry with a towel), will help give them a fluffier texture.

Decent.

Cayenne pepper tastes like dirt to me, I use chili powder or crushed red peppers.

I use no added salt at all, between the olive oil and ketchup there is enough flavor to not need it.

I have found that it’s better to brush the olive oil on rather than toss it in a bag. For whatever reason I get a better coating that way and you really need a good oil coating so they have enough time to cook without burning. Plus you waste less oil (olive oil is expensive!).
